Preparation
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together the wet ingredients: milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix them until just combined, being careful not to overmix the batter; a few lumps are acceptable.
Cooking
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour approximately 1/4 cup of batter per pancake onto the hot griddle.
- Cook for 2-3 minutes per side, or until golden brown and cooked through, flipping only once.
Notes
Do not overmix the batter; lumps are good for fluffy pancakes! Serve immediately with your favorite toppings.
