Ingredients
  

Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
Vegetables
  • 2 cups broccoli florets
  • 1 cup carrots, thinly sliced
  • 2 bell peppers (any color), sliced medium
Sauce
  • 0.5 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water
For Cooking
  • 1 tbsp vegetable oil

Method
 

Prepare Ingredients
  1. Whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, cornstarch, and water to create the stir fry sauce. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, then remove the chicken from the pan and set aside.
  3. Add broccoli, carrots, and bell peppers to the same skillet. Stir-fry for 5-7 minutes until the vegetables are crisp-tender.
Combine and Serve
  1. Return the cooked chicken to the skillet with the vegetables. Give the prepared sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats all ingredients.
  2. Serve immediately over rice or noodles, garnished with sesame seeds or chopped green onions if desired.

Notes

For extra heat, add a pinch of red pepper flakes to the sauce. Feel free to customize with your favorite vegetables like snow peas, mushrooms, or water chestnuts.
