Making the Crust

Preparing the Filling
- Gently mix sliced peaches with sugar, flour, lemon juice, vanilla, and cinnamon.
Assembling and Baking
- Roll out the chilled dough into a 12-inch circle on parchment paper.
- Spoon the peach mixture onto the center, leaving a 2-inch border.
- Fold the dough edges over the filling.
- Brush the crust with egg wash and sprinkle with turbinado sugar.
