  • 1 cup unsalted butter cold, cut into cubes
  • 1/2 cup ice water
For the Filling
  • 4-5 medium peaches ripe, sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
For Assembly
  • 1 large egg beaten, for egg wash
  • 1 tablespoon turbinado sugar for sprinkling

Method
 

Making the Crust
  1. Combine flour, sugar, and salt in a bowl; cut in butter until crumbly.
  2. Add ice water gradually, mixing until dough forms.
  3. Shape into a disk, wrap, and chill for 30 minutes.
Preparing the Filling
  1. Gently mix sliced peaches with sugar, flour, lemon juice, vanilla, and cinnamon.
Assembling and Baking
  1. Roll out the chilled dough into a 12-inch circle on parchment paper.
  2. Spoon the peach mixture onto the center, leaving a 2-inch border.
  3. Fold the dough edges over the filling.
  4. Brush the crust with egg wash and sprinkle with turbinado sugar.
