Preparation
- Wash and chop all vegetables into bite-sized pieces; mince the garlic.
Cooking
- Heat olive oil in a large pot over medium heat, then add chopped onions, carrots, and celery, sautéing for 5-7 minutes until softened.
- Stir in minced garlic, dried oregano, and dried basil, cooking for another minute until fragrant.
- Add vegetable broth, diced tomatoes, potatoes, and zucchini to the pot, bringing the mixture to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, or until the potatoes and other vegetables are tender.
- Season with salt and pepper to taste, then ladle the hearty vegetable soup into bowls and serve hot.
Notes
For extra flavor, you can add a bay leaf during simmering and remove it before serving. Feel free to customize the vegetables based on what's in season or what you have on hand. A sprinkle of fresh parsley or a dollop of pesto can also brighten up the soup upon serving.
