  • 2 celery stalks
  • 1 medium onions
  • 2 medium potatoes
  • 1 medium zucchini
  • 1 28-ounce canned diced tomatoes
  • 2 cloves garlic cloves

  • 6 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

Preparation
  1. Wash and chop all vegetables into bite-sized pieces; mince the garlic.
Cooking
  1. Heat olive oil in a large pot over medium heat, then add chopped onions, carrots, and celery, sautéing for 5-7 minutes until softened.
  2. Stir in minced garlic, dried oregano, and dried basil, cooking for another minute until fragrant.
  3. Add vegetable broth, diced tomatoes, potatoes, and zucchini to the pot, bringing the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the potatoes and other vegetables are tender.
  5. Season with salt and pepper to taste, then ladle the hearty vegetable soup into bowls and serve hot.

Notes

For extra flavor, you can add a bay leaf during simmering and remove it before serving. Feel free to customize the vegetables based on what's in season or what you have on hand. A sprinkle of fresh parsley or a dollop of pesto can also brighten up the soup upon serving.
