Preparation
  1. Preheat your oven to 450°F (230°C) and prepare a large roasting pan with a rack.
  2. Pat the spatchcocked turkey dry with paper towels to ensure crispy skin.
Seasoning
  1. In a small bowl, mix olive oil, salt, black pepper, garlic powder, and paprika to create a seasoning rub.
  2. Rub the seasoning mixture all over the turkey, making sure to get under the skin for extra flavor.
Cooking
  1. Place the seasoned turkey on the roasting rack, skin side up, ensuring it is flat.
  2. Roast for 1 hour at 450°F (230°C), then reduce the oven temperature to 350°F (175°C) and continue cooking for another 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  3. If the skin starts to get too dark, you can loosely tent it with aluminum foil.
Resting
  1. Once cooked, remove the turkey from the oven and let it rest for at least 15-20 minutes before carving.
  2. This resting period allows the juices to redistribute, ensuring a tender and moist turkey.
