Preparation
- Preheat your oven to 450°F (230°C) and prepare a large roasting pan with a rack.
- Pat the spatchcocked turkey dry with paper towels to ensure crispy skin.
Seasoning
- In a small bowl, mix olive oil, salt, black pepper, garlic powder, and paprika to create a seasoning rub.
- Rub the seasoning mixture all over the turkey, making sure to get under the skin for extra flavor.
Cooking
- Place the seasoned turkey on the roasting rack, skin side up, ensuring it is flat.
- Roast for 1 hour at 450°F (230°C), then reduce the oven temperature to 350°F (175°C) and continue cooking for another 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
- If the skin starts to get too dark, you can loosely tent it with aluminum foil.
Resting
- Once cooked, remove the turkey from the oven and let it rest for at least 15-20 minutes before carving.
- This resting period allows the juices to redistribute, ensuring a tender and moist turkey.

For an even more flavorful turkey, consider brining it overnight before spatchcocking and roasting. Always use a meat thermometer to ensure the turkey is cooked to a safe internal temperature.
