Ingredients
  

Steak Marinade
  • 1 lb Skirt Steak
  • 2 tbsp Chipotle Peppers in Adobo Sauce
  • 3 cloves Garlic
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 2 tbsp Lime Juice
  • 2 tbsp Olive Oil
Bowl Ingredients
  • 4 cups Cooked Rice
  • 1 can Black Beans
  • 1 cup Corn Salsa
  • 1 cup Pico de Gallo
  • 1 cup Guacamole
  • 0.5 cup Sour Cream
  • 2 cups Shredded Lettuce

Method
 

Marinating the Steak
  1. Slice the skirt steak against the grain into thin strips; then, mince the garlic cloves and chipotle peppers.
  2. Combine the steak, chipotle peppers, minced garlic, cumin, oregano, lime juice, and olive oil in a bowl, ensuring everything is well mixed.
  3. Cover the bowl and marinate the steak in the refrigerator for at least 30 minutes, or for up to 4 hours for deeper flavor.
Cooking the Steak
  1. Heat a large skillet or grill pan over medium-high heat until it's very hot.
  2. Add the marinated steak to the hot pan and cook for 2-3 minutes per side, or until it reaches your desired doneness.
  3. Remove the cooked steak from the pan and let it rest for a few minutes before slicing or serving.
Assembling the Bowl
  1. In each serving bowl, add a base of cooked rice.
  2. Top the rice with portions of the cooked steak, black beans, corn salsa, pico de gallo, guacamole, and shredded lettuce.
  3. Finish each bowl with a dollop of sour cream, if desired, and serve immediately.

Notes

For extra spice, add a pinch of cayenne pepper to the marinade. You can also customize your bowl with other toppings like cheese or various salsas.
