Marinating the Steak
- Slice the skirt steak against the grain into thin strips; then, mince the garlic cloves and chipotle peppers.
- Combine the steak, chipotle peppers, minced garlic, cumin, oregano, lime juice, and olive oil in a bowl, ensuring everything is well mixed.
- Cover the bowl and marinate the steak in the refrigerator for at least 30 minutes, or for up to 4 hours for deeper flavor.
Cooking the Steak
- Heat a large skillet or grill pan over medium-high heat until it's very hot.
- Add the marinated steak to the hot pan and cook for 2-3 minutes per side, or until it reaches your desired doneness.
- Remove the cooked steak from the pan and let it rest for a few minutes before slicing or serving.
Assembling the Bowl
- In each serving bowl, add a base of cooked rice.
- Top the rice with portions of the cooked steak, black beans, corn salsa, pico de gallo, guacamole, and shredded lettuce.
- Finish each bowl with a dollop of sour cream, if desired, and serve immediately.
Notes
