Falafel Preparation
- In a food processor, combine chickpeas, parsley, cilantro, garlic, onion, flour, cumin, coriander, salt, and pepper.
- Pulse until the mixture is well combined but still slightly chunky, then form into small patties or balls.
- Heat vegetable oil in a deep pan or pot over medium-high heat for frying.
Cooking and Assembly
- Carefully fry the falafel in batches for 3-5 minutes per side until they are golden brown and crispy.
- Remove the cooked falafel and place them on a paper towel-lined plate to drain excess oil.
- To prepare the tahini dressing, whisk together tahini, lemon juice, water, minced garlic, salt, and pepper until smooth.
- Assemble the bowls by layering quinoa or rice, mixed greens, cherry tomatoes, cucumber, red onion, falafel, and a drizzle of tahini dressing.
Notes
For extra flavor, add a pinch of cayenne pepper to the falafel mixture. You can also customize your bowl with other vegetables like bell peppers or roasted sweet potatoes.
