  • 0.5 cup chicken broth
  • 2 tbsp capers
  • 2 tbsp fresh parsley chopped

Method
 

Preparation
  1. Pound chicken breasts to a consistent thickness then season with salt and pepper.
  2. Dredge the chicken in flour, shaking off any excess.
Cooking
  1. Heat olive oil and butter in a large skillet over medium-high heat, then pan-fry chicken until golden brown and cooked through, about 3-4 minutes per side.
  2. Remove chicken and keep warm.
  3. Deglaze the pan with chicken broth and lemon juice, then stir in capers and fresh parsley to create the sauce.
Serving
  1. Serve the chicken with the lemon-caper sauce spooned over the top.

Notes

For extra flavor, add a splash of white wine to the sauce with the chicken broth and lemon juice. Serve with pasta or rice to soak up the delicious sauce.
