Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract

Method
 

Cake
  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing and flouring them.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg, then set aside.
  3. In another bowl, beat eggs, oil, and vanilla until well combined, then add to the dry ingredients and mix well.
  4. Stir in grated carrots and optional nuts until evenly distributed.
  5. Divide batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to a wire rack to cool completely.
Cream Cheese Frosting
  1. In a medium bowl, beat softened cream cheese and butter until smooth and creamy.
  2. Gradually add confectioners' sugar, beating until fully incorporated, then stir in vanilla extract.
  3. Assemble the cake by frosting the top of the first layer, placing the second layer on top, and then frosting the top and sides.

Notes
