  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation
  1. In a large bowl, whisk together the olive oil, lemon juice, oregano, garlic powder, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the marinade, ensuring it's fully coated, then cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
  3. If using wooden skewers, remember to soak them in water for at least 30 minutes before grilling to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for even cooking.
Cooking
  1. Preheat your grill to medium-high heat, ensuring it's hot enough to sear the chicken effectively.
  2. Place the chicken skewers on the preheated grill once it's ready.
  3. Grill the chicken for 3-4 minutes per side, turning occasionally, until it's cooked through and has nice grill marks.
Serving
  1. Remove the cooked chicken souvlaki from the grill and let it rest for a few minutes.
  2. Serve the chicken souvlaki immediately with your favorite sides like pita bread, tzatziki sauce, or a fresh Greek salad.

Notes

For extra flavor, add a pinch of red pepper flakes to the marinade. You can also pan-fry the chicken if you don't have a grill.
