Preparation
- In a large bowl, whisk together the olive oil, lemon juice, oregano, garlic powder, salt, and pepper to create the marinade.
- Add the cubed chicken to the marinade, ensuring it's fully coated, then cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
- If using wooden skewers, remember to soak them in water for at least 30 minutes before grilling to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for even cooking.
Cooking
- Preheat your grill to medium-high heat, ensuring it's hot enough to sear the chicken effectively.
- Place the chicken skewers on the preheated grill once it's ready.
- Grill the chicken for 3-4 minutes per side, turning occasionally, until it's cooked through and has nice grill marks.
Serving
- Remove the cooked chicken souvlaki from the grill and let it rest for a few minutes.
- Serve the chicken souvlaki immediately with your favorite sides like pita bread, tzatziki sauce, or a fresh Greek salad.
Notes
