Dough Preparation
- In a large bowl, whisk together the flour, yeast, sugar, and salt. Gradually add the lukewarm water and olive oil, mixing until a shaggy dough forms.
- Cover the bowl with plastic wrap and let it rest in a warm place for 1-2 hours, or until doubled in size.
Baking
- Preheat your oven to 200°C (390°F) and lightly grease a baking sheet or a 9x13 inch baking pan with olive oil.
- Gently transfer the dough to the prepared baking sheet and, using your fingertips, gently dimple the dough, creating indentations across the surface.
- Drizzle generously with olive oil, then arrange the cherry tomatoes and sprinkle with fresh rosemary and flaky sea salt.
- Bake for 20-25 minutes, or until golden brown and cooked through.
Serving
- Remove from the oven, let cool slightly on a wire rack, then cut into slices and serve warm.
Notes
For extra flavor, you can add minced garlic or different herbs to the topping. This focaccia is excellent served with soups, salads, or as a side with main dishes.
