Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- Boil the sweet potatoes in a large pot of salted water until they are very tender; this usually takes about 15-20 minutes.
Making the Sweet Potato Base
- Drain the cooked sweet potatoes and peel them once they are cool enough to handle, then mash them thoroughly in a large bowl.
- Add the melted butter, granulated sugar, brown sugar, eggs, milk, vanilla extract, and salt to the mashed sweet potatoes, mixing until well combined and smooth.
- Spread the sweet potato mixture evenly into the prepared baking dish.
Preparing the Pecan Topping
- In a medium bowl, combine the flour, brown sugar, and chopped pecans.
- Pour the melted butter over the dry ingredients and mix with a fork until crumbly.
Baking
- Sprinkle the pecan topping evenly over the sweet potato mixture in the baking dish.
- Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
Serving
- Let the casserole cool for a few minutes before serving warm.
Notes
For extra flavor, you can add a pinch of nutmeg or cinnamon to the sweet potato mixture. If you prefer a less sweet casserole, you can slightly reduce the amount of sugar in both the base and the topping.
