Preparation
- Preheat your oven to 325°F (160°C) and grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
Mixing
- In a large bowl, combine the granulated sugar, vegetable oil, eggs, and vanilla extract; mix until well blended.
- Add the shredded zucchini to the wet ingredients and stir until evenly distributed.
Combining Wet and Dry
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the batter.
Baking
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling
- Allow the zucchini bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For extra flavor, you can add 1/2 cup of chopped nuts or chocolate chips to the batter with the dry ingredients. Ensure your zucchini is well-drained to avoid a watery bread.
