Preparation
- Cook egg noodles according to package directions, then drain and set aside.
- Season beef strips with salt and pepper.
Cooking
- Melt butter in a large skillet over medium-high heat. Add beef and cook until browned on all sides, then remove from skillet.
- Add onion and mushrooms to the skillet and cook until softened.
- Stir in flour and cook for 1 minute, then gradually whisk in beef broth.
- Bring to a simmer and cook for 5 minutes, or until the sauce thickens.
- Return beef to the skillet; stir in sour cream and Dijon mustard. Heat through gently, but do not boil.
Serving
- Serve the beef stroganoff hot over the cooked egg noodles.
Notes
For an extra rich flavor, use full-fat sour cream. Ensure the sour cream is at room temperature before adding to prevent curdling. You can also add a splash of Brandy for more depth of flavor. If you prefer a thicker sauce, you can add a bit more flour, but be sure to cook it for at least a minute to remove any raw flour taste.
