  • 2 tbsp butter
  • 1 onion chopped
  • 8 oz mushrooms sliced
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 2 tbsp flour
  • 12 oz egg noodles
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation
  1. Cook egg noodles according to package directions, then drain and set aside.
  2. Season beef strips with salt and pepper.
Cooking
  1. Melt butter in a large skillet over medium-high heat. Add beef and cook until browned on all sides, then remove from skillet.
  2. Add onion and mushrooms to the skillet and cook until softened.
  3. Stir in flour and cook for 1 minute, then gradually whisk in beef broth.
  4. Bring to a simmer and cook for 5 minutes, or until the sauce thickens.
  5. Return beef to the skillet; stir in sour cream and Dijon mustard. Heat through gently, but do not boil.
Serving
  1. Serve the beef stroganoff hot over the cooked egg noodles.

Notes

For an extra rich flavor, use full-fat sour cream. Ensure the sour cream is at room temperature before adding to prevent curdling. You can also add a splash of Brandy for more depth of flavor. If you prefer a thicker sauce, you can add a bit more flour, but be sure to cook it for at least a minute to remove any raw flour taste.
