- Rinse the red lentils thoroughly under cold water until the water runs clear; then, chop the onion and carrots, and mince the garlic.
- Heat the olive oil in a large pot or Dutch oven over medium heat, then add the chopped onion and carrots, cooking until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Add the rinsed lentils and vegetable broth to the pot, bringing the mixture to a boil before reducing the heat to a simmer.
- Cook for 20-25 minutes, or until the lentils are tender and the soup has thickened, stirring occasionally.
- Season the lentil soup with salt and pepper to taste, then serve hot with a garnish of fresh herbs if desired.
Notes
For extra flavor, you can add a bay leaf to the soup while it simmers and remove it before serving. A squeeze of lemon juice at the end brightens the flavors.
