Method
 

Preparation
  1. Cook and shred the chicken breasts, then drain and rinse the cannellini beans.
  2. Dice the onion and mince the garlic for sautéing.
Cooking the Chili
  1. Heat olive oil in a large pot over medium heat, then add the diced onion and cook until softened, about 5 minutes.
  2. Stir in the minced garlic, cumin, oregano, chili powder, salt, and pepper, cooking for another minute until fragrant.
  3. Add the shredded chicken, cannellini beans, chicken broth, and diced green chilies to the pot, bringing the mixture to a simmer.
  4. Reduce heat to low, cover, and let the chili simmer for at least 30 minutes to allow the flavors to meld.
Finishing and Serving
  1. Stir in the sour cream and fresh cilantro just before serving.
  2. Serve the white chicken chili warm, garnished with optional toppings like shredded cheddar cheese, diced avocado, or sliced jalapeño.

Notes
