Cooking the Meat

Preparing the Salad
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, diced red onion, and diced avocado.
- Once the cooked meat has cooled slightly, add it to the large bowl with the vegetables.
Making the Dressing
- In a separate small bowl, whisk together the Greek yogurt, salsa, lime juice, cumin, chili powder, salt, and pepper until smooth and well combined.
Assembling and Serving
- Pour the dressing over the salad ingredients and toss gently to ensure everything is evenly coated.
- Divide the taco salad among four plates and sprinkle with shredded cheddar cheese before serving.
Notes
For extra crunch, add some crushed whole-grain tortilla chips. You can also customize by adding different vegetables like bell peppers or jicama.
