  • 0.25 cup chocolate chips

Equipment

  • large mixing bowls
  • baking sheet
  • parchment paper
  • whisk

Method

Preparation
  1. Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, mixed nuts, shredded coconut, cinnamon, and salt. Mix well.
Combining Ingredients
  1. In a separate smaller bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
  2. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.
Baking
  1. Spread the granola mixture evenly onto the prepared baking sheet.
  2. Bake for 25-35 minutes, stirring halfway through, until the granola is golden brown and crispy.
Cooling and Storing
  1. Allow the granola to cool completely on the baking sheet; it will crisp up further as it cools.
  2. Once cooled, stir in any optional add-ins like dried fruit or chocolate chips, then transfer the granola to an airtight container for storage.

Notes

For extra flavor, you can toast the nuts before adding them to the mixture. Feel free to experiment with different nuts, seeds, and dried fruits to customize your granola. Store the granola at room temperature for up to 2 weeks.
