  • 1 lb Ribeye steak, thinly sliced
  • 1 large Sweet onion, thinly sliced
  • 6 slices Provolone cheese, sliced
  • 2 Hoagie rolls
  • 2 tbsp Olive oil
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Thinly slice the ribeye steak, ideally partially frozen for easier cutting, and set aside. Slice the sweet onion thinly as well.
Cooking
  1. Heat olive oil in a large skillet or griddle over medium-high heat, then add the sliced onions and cook until caramelized and tender, about 8-10 minutes.
  2. Push the onions to one side of the skillet, add the thinly sliced steak to the other side, and cook, breaking it up with a spatula, until browned and cooked through.
  3. Season the beef and onions with salt and pepper, then mix them together.
Assembly
  1. Divide the beef and onion mixture into two portions on the skillet, top each portion with three slices of provolone cheese, and let it melt.
  2. Carefully place an open hoagie roll over each portion, scoop the mixture directly into the roll, and serve immediately.

Notes

For an extra kick, add some chopped bell peppers or mushrooms to the onions while they caramelize. You can also experiment with different types of cheese like Cheez Whiz for a more classic Philly experience.
