Preparation
- Heat olive oil in a large skillet over medium heat. Add chopped onion and bell pepper, then cook until softened for about 5-7 minutes.
Cooking the Sauce
- Stir in minced garlic, cumin, paprika, chili powder, salt, and black pepper, cooking for another minute until fragrant.
- Pour in the crushed tomatoes, bring the mixture to a simmer, and cook for 10-15 minutes until the sauce slightly thickens.
Adding Eggs
- Make 6 small wells in the tomato sauce and crack an egg into each well. Season the eggs with a pinch of salt and pepper.
Finishing the Dish
- Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are runny to your preference.
