  1. Pat the chicken thighs dry with paper towels and season generously with salt and black pepper on both sides.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown and crispy.
  2. Flip the chicken thighs and add butter and minced garlic to the skillet. Cook for another 10-12 minutes, basting the chicken frequently with the garlic butter, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  3. Remove chicken from skillet and let rest for a few minutes before serving. Garnish with fresh parsley.
