For the Crust
  • 1.5 cups All-purpose flour
  • .5 cup Unsalted butter, very cold and cubed
  • 3-4 tablespoons Ice water
For the Filling
  • 15 ounces Canned pumpkin puree
  • 12 ounces Evaporated milk
  • 2 Eggs, large
  • .75 cup Granulated sugar
  • 1 teaspoon Ground cinnamon
  • .5 teaspoon Ground ginger
  • .25 teaspoon Ground nutmeg
  • .125 teaspoon Ground cloves
  • .125 teaspoon Allspice
  • .25 teaspoon Salt

Method
 

Prepare the Crust
  1. Combine flour and cold butter in a food processor or with a pastry blender until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until a dough forms. Press the dough into a disk, wrap it, and chill for at least 30 minutes.
Make the Filling
  1. In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, and sugar until smooth.
  2. Stir in the cinnamon, ginger, nutmeg, cloves, allspice, and salt until well combined.
  3. Pour the filling into the chilled pie crust.
Bake the Pie
  1. Preheat your oven to 425°F (220°C).
  2. Bake for 15 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for 45-50 minutes, or until a knife inserted near the center comes out clean.
  3. Let the pie cool completely on a wire rack before serving.

Notes

For a flakier crust, avoid overworking the dough. If the edges of your crust are browning too quickly, you can cover them with aluminum foil. This pie is best served chilled with a dollop of whipped cream.
