Prepare the Crust
- Combine flour and cold butter in a food processor or with a pastry blender until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until a dough forms. Press the dough into a disk, wrap it, and chill for at least 30 minutes.
Make the Filling
- In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, and sugar until smooth.
- Stir in the cinnamon, ginger, nutmeg, cloves, allspice, and salt until well combined.
- Pour the filling into the chilled pie crust.
Bake the Pie
- Preheat your oven to 425°F (220°C).
- Bake for 15 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for 45-50 minutes, or until a knife inserted near the center comes out clean.
- Let the pie cool completely on a wire rack before serving.
Notes
For a flakier crust, avoid overworking the dough. If the edges of your crust are browning too quickly, you can cover them with aluminum foil. This pie is best served chilled with a dollop of whipped cream.
