Step 1: Prepare the Cake
  1. Preheat your oven to 375°F (190°C) and grease a 10x15-inch jelly roll pan, then line it with parchment paper and grease the parchment.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger, and salt.
  3. In a large bowl, beat the eggs and granulated sugar until light and fluffy, then mix in the pumpkin puree.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Spread the batter evenly into the prepared pan and bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is still warm, carefully invert it onto a tea towel dusted with powdered sugar, remove the parchment, and gently roll the cake and towel together from the short end.
Step 2: Prepare the Filling
  1. In a medium bowl, beat the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  2. Once the cake has completely cooled, carefully unroll it and spread the cream cheese filling evenly over the surface.
Step 3: Assemble and Serve
  1. Gently re-roll the cake, without the towel, starting from the same short end.
  2. Wrap the pumpkin roll tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
  3. Before serving, unwrap the roll, dust with additional powdered sugar, and slice into individual portions, optionally garnishing with chopped pecans.
