Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the egg until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet, then bake for 8-10 minutes, or until the edges are lightly golden.
- Immediately after removing from the oven, press a chocolate kiss into the center of each cookie, allowing it to soften slightly.
Cooling and Serving
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, use room temperature peanut butter and egg. If the chocolate kisses are difficult to unwrap, chill them slightly beforehand.
