Preparation
- Pat the chicken breasts dry with paper towels to ensure a crispy crust.
- Generously sprinkle both sides of each chicken breast with blackening seasoning, pressing lightly to adhere.
Cooking
- Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot.
- Add olive oil to the hot skillet, then carefully place the seasoned chicken breasts in the pan, ensuring not to overcrowd it.
- Cook for 4-6 minutes per side, or until a dark, crispy crust forms and the chicken is cooked through to an internal temperature of 165°F (74°C).
Serving
- Remove the chicken from the skillet and let it rest for a few minutes before slicing or serving whole with your favorite sides.
Notes
For extra flavor, marinate the chicken in a little olive oil and seasoning for 30 minutes before cooking. Adjust the amount of blackening seasoning to your spice preference.
