Ingredients

Main Ingredients
  • 4 large onions yellow or sweet
  • 4 tbsp butter
  • 6 cups beef broth
  • 0.5 cup dry sherry or white wine
  • 1 loaf baguette sliced
  • 8 oz Gruyere cheese shredded
  • 3 thyme sprigs
  • 1 bay leaf
  • salt to taste
  • black pepper to taste

Equipment

  • Large pot or Dutch oven
  • Knife
  • Cutting board
  • Ladle
  • Oven-safe bowls

Method

Caramelizing Onions
  1. Slice the onions thinly and melt butter in a large pot or Dutch oven over medium-low heat.
  2. Add the sliced onions to the pot, stirring occasionally, and cook slowly for 30-40 minutes until they are deeply golden brown and caramelized.
Building the Broth
  1. Deglaze the pot with sherry or white wine, scraping up any browned bits from the bottom, and cook for a few minutes until reduced.
  2. Pour in the beef broth, add thyme sprigs and a bay leaf, then bring the soup to a simmer and cook for at least 20 minutes to allow the flavors to meld.
Finishing and Serving
  1. Preheat your broiler and season the soup with salt and pepper to taste, removing the thyme and bay leaf.
  2. Ladle the hot soup into oven-safe bowls, top each with a slice or two of baguette, and generously sprinkle with Gruyere cheese.
  3. Place the bowls under the broiler for 2-4 minutes until the cheese is melted and bubbly and golden brown, then serve immediately.

Notes

For an even richer flavor, use a combination of beef and chicken broth. If you don't have sherry or white wine, a splash of balsamic vinegar can be used as a substitute for deglazing. Be patient with the onion caramelization; it's the key to a truly delicious French Onion Soup.
