Preparation
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
Mixing and Baking
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
- In a small shallow bowl, combine 1/4 cup granulated sugar and ground cinnamon for the coating.
- Roll dough into 1-inch balls and then roll each ball in the cinnamon-sugar mixture to coat evenly.
- Place cookies 2 inches apart on the prepared baking sheets and bake for 8-10 minutes, or until the edges are set but the centers are still soft.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, you can slightly brown the butter before adding it to the sugar. Do not overbake the cookies, as they will continue to set as they cool. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
