Preparation
- In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat, then add the chopped onion and cook until softened, about 5 minutes.

- Add the diced carrots, potatoes, and celery to the pot, then pour in the vegetable broth and canned diced tomatoes.
Cooking

Notes
