Cooking Steps
- Heat a large skillet or wok over medium-high heat with a tablespoon of cooking oil.
- Add the shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
- Pour the beaten eggs into the hot skillet and scramble until cooked; remove and set aside.
- Add remaining oil, then sauté the minced garlic for 30 seconds until fragrant.
- Stir in the frozen peas and carrots, cooking for 2-3 minutes.
- Add the day-old cooked rice, breaking up any clumps.
- Pour in the soy sauce and sesame oil; mix well to combine everything.
- Return the cooked shrimp and scrambled eggs to the skillet, stirring to heat through.
- Garnish with chopped green onions and serve immediately.
Notes
For best results, use cold, day-old rice as it fries better and doesn't get mushy. You can also customize by adding other vegetables like bell peppers or corn.
