  • 1 lb Shrimp peeled and deveined
  • 3 cups Cooked Rice day-old rice is best
  • 2 Eggs beaten
  • 1 cup Frozen Peas and Carrots
  • 3 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 cloves Garlic minced
  • 2 Green Onions chopped
Optional Garnishes
  • Sriracha to taste
  • Lime wedges

Cooking Steps
  1. Heat a large skillet or wok over medium-high heat with a tablespoon of cooking oil.
  2. Add the shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
  3. Pour the beaten eggs into the hot skillet and scramble until cooked; remove and set aside.
  4. Add remaining oil, then sauté the minced garlic for 30 seconds until fragrant.
  5. Stir in the frozen peas and carrots, cooking for 2-3 minutes.
  6. Add the day-old cooked rice, breaking up any clumps.
  7. Pour in the soy sauce and sesame oil; mix well to combine everything.
  8. Return the cooked shrimp and scrambled eggs to the skillet, stirring to heat through.
  9. Garnish with chopped green onions and serve immediately.

Notes

For best results, use cold, day-old rice as it fries better and doesn't get mushy. You can also customize by adding other vegetables like bell peppers or corn.
