  • 1/2 cup raisins optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt; set aside.
Mixing
  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined, then mix in the pumpkin puree.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in any optional additions like chocolate chips, nuts, or raisins.
Baking
  1. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
  2. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, you can add a cream cheese frosting once the cookies are completely cool.
