Ingredients

Donuts
  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup apple cider
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Equipment

  • Large mixing bowls
  • Whisk
  • Donut pan
  • Wire rack

Method

Preparation
  1. Whisk together flour, sugar, baking powder, cinnamon, and salt in a large bowl, then set aside.
  2. In a separate bowl, whisk the egg, apple cider, melted butter, and vanilla extract until combined.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  4. Cover the donut batter and refrigerate for at least 30 minutes, or overnight, for best results.
Baking
  1. Preheat your oven to 375°F (190°C) and grease a donut pan.
  2. Spoon or pipe the chilled batter into the donut cavities, filling each about two-thirds full.
  3. Bake for 12-15 minutes, or until the donuts are golden brown and spring back when lightly touched.
Finishing
  1. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  2. Optionally, prepare a cinnamon sugar topping by combining 1/2 cup granulated sugar and 1 teaspoon ground cinnamon, then toss the cooled donuts in the mixture to coat.

Notes

For extra apple flavor, reduce the apple cider by half and then add it to the batter. This concentrates the flavor. These donuts are best enjoyed fresh. Store any leftovers in an airtight container at room temperature for up to 2 days or freeze for longer storage.
