Baking the Cookies
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in a medium bowl; set aside.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Making the Frosting
- In a medium bowl, beat softened butter until creamy.
- Gradually add powdered sugar, mixing until well combined.
- Stir in milk, one tablespoon at a time, until the frosting reaches your desired consistency.
- Mix in vanilla extract and food coloring, if using, until evenly distributed.
Assembly
- Once the cookies are completely cool, spread or pipe the frosting onto each cookie.
Notes
For festive occasions, divide the frosting and tint with different food colors. Get creative with sprinkles or edible glitter for extra flair!
