Gravy Preparation
  1. Separate the fat from the turkey drippings using a fat separator or by chilling and skimming, then measure 2 cups of the defatted drippings.
  2. In a medium saucepan, whisk the flour into the warm drippings over medium heat, cooking for 1-2 minutes until a smooth roux forms.
  3. Gradually whisk in the broth until smooth, then bring the mixture to a simmer, stirring frequently, and cook for 5-7 minutes until the gravy thickens; season with salt and pepper to taste.

Notes

For extra flavor, you can add a pinch of dried thyme or sage to the gravy while it simmers. Adjust thickness by adding more broth for a thinner consistency or cooking longer for a thicker one.
