  • 8 baguette slices
  • 1.5 cups Gruyere cheese

Method
 

Preparation
  1. Slice the onions thinly and melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the sliced onions to the pot and cook, stirring occasionally, for 20-25 minutes until caramelized and deeply golden brown.
  3. Pour in the beef broth and dry sherry, then bring the soup to a simmer and season with salt and pepper to taste.
  4. While the soup simmers, preheat your oven to a low broil setting and arrange the baguette slices on a baking sheet.
  5. Sprinkle each baguette slice with Gruyere cheese and broil for 2-3 minutes, or until the cheese is melted and bubbly.

Notes
