  • 0.5 cup cornstarch
  • 0.25 cup all-purpose flour
  • 1 egg beaten
  • 2 tbsp water
  • 3 cups vegetable oil for frying
Orange Sauce
  • 0.75 cup orange juice
  • 0.25 cup rice vinegar
  • 2 tbsp soy sauce
  • 0.5 cup brown sugar
  • 1 tsp ginger grated
  • 2 cloves garlic minced
  • 1 tsp orange zest
  • 0.5 tsp red pepper flakes
  • 1 tbsp cornstarch
  • 2 tbsp water
Garnish (Optional)
  • green onions sliced
  • sesame seeds

Method
 

Prepare the Chicken
  1. In a medium bowl, whisk together the cornstarch, flour, egg, and 2 tablespoons of water to create a thick batter.
  2. Add the chicken pieces to the batter and toss to ensure each piece is evenly coated.
  3. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat until it reaches 350°F (175°C).
  4. Carefully add the battered chicken pieces to the hot oil in batches, being careful not to overcrowd the pot; fry for 3-4 minutes per batch until golden brown and cooked through, then remove with a slotted spoon and place on a wire rack to drain.
Make the Orange Sauce
  1. In a saucepan, combine the orange juice, rice vinegar, soy sauce, brown sugar, grated ginger, minced garlic, orange zest, and red pepper flakes.
  2. Bring the mixture to a simmer over medium heat, then in a small bowl, whisk together 1 tablespoon of cornstarch and 2 tablespoons of water to create a slurry.
  3. Slowly whisk the cornstarch slurry into the simmering sauce, stirring constantly until the sauce thickens to your desired consistency.
  4. Remove the sauce from heat and set aside.
Combine and Serve
  1. In a large bowl, gently toss the fried chicken with the prepared orange sauce until all pieces are well coated.
  2. Garnish with sliced green onions and sesame seeds if desired, and serve immediately with steamed rice or noodles.

Notes

For extra crispiness, you can double-fry the chicken. Fry once, let rest for a few minutes, then fry again for 1-2 minutes until extra crispy.
