Preparation
  1. Preheat your oven to 325°F (160°C); then, grease and flour a 10-inch Bundt pan or a 9x13 inch baking dish.
  2. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
Mixing
  1. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, and then stir in the vanilla extract.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  4. Gently fold in the diced fresh peaches until they are evenly distributed throughout the batter.
Baking
  1. Pour the batter into the prepared pan and bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.

Notes

For extra flavor, sprinkle a little cinnamon or nutmeg into the dry ingredients. You can also add a simple glaze by mixing powdered sugar with a little milk or lemon juice and drizzling it over the cooled cake. Ensure peaches are ripe but firm for best results.
