Preparation
- Preheat your oven to 325°F (160°C); then, grease and flour a 10-inch Bundt pan or a 9x13 inch baking dish.
- In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
Mixing
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, and then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
- Gently fold in the diced fresh peaches until they are evenly distributed throughout the batter.
Baking
- Pour the batter into the prepared pan and bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
Notes
For extra flavor, sprinkle a little cinnamon or nutmeg into the dry ingredients. You can also add a simple glaze by mixing powdered sugar with a little milk or lemon juice and drizzling it over the cooled cake. Ensure peaches are ripe but firm for best results.
