Ingredients

Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 0.5 teaspoon salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 cups grated carrots
Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Equipment

  • oven
  • 9x13 inch baking pan
  • large bowl
  • whisk
  • electric mixer

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
  3. In a separate bowl, beat the eggs, oil, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined, then fold in the grated carrots.
Baking
  1. Pour the batter into the prepared baking pan and bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
Frosting
  1. While the cake cools, beat the softened cream cheese and butter until smooth, then gradually add the powdered sugar and vanilla extract until creamy.
  2. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Notes

For extra flavor, you can add chopped nuts or raisins to the batter. Ensure the cake is completely cool before frosting to prevent the frosting from melting.
