Ingredients
  

For the Chicken:
  • 2 large chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For the Fajitas:
  • 3 bell peppers red, yellow, and green, sliced
  • 1 medium onion sliced
For Serving:
  • 8 small flour tortillas
  • salsa
  • sour cream
  • guacamole

Method
 

Marinate Chicken:
  1. Slice the chicken breasts into thin strips. In a bowl, combine the chicken with olive oil, lime juice, chili powder, cumin, paprika, salt, and black pepper. Mix well to coat the chicken and let it marinate for at least 10 minutes.
Cook Chicken and Vegetables:
  1. Heat a large skillet or cast-iron pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the pan and set aside.
  2. In the same pan, add a little more olive oil if needed. Add the sliced bell peppers and onion. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.
  3. Return the cooked chicken to the pan with the vegetables. Toss everything together and cook for another 1-2 minutes to heat through.
Serve:
  1. Warm the flour tortillas according to package instructions. Serve the chicken and vegetable mixture in the warm tortillas with your favorite toppings like salsa, sour cream, and guacamole.

Notes

For extra flavor, marinate the chicken for at least 30 minutes, or even overnight in the refrigerator. Adjust the spice levels to your preference by adding more or less chili powder and cumin.
