Method
 

Preparation
  1. Place eggs in a saucepan and cover with cold water by one inch; bring to a boil, then immediately remove from heat, cover, and let stand for 9 minutes.
  2. Drain eggs and transfer them to an ice bath for 5 minutes; peel and slice in half lengthwise.
  3. Scoop out the yolks into a small bowl and mash with a fork.
Making the Filling
  1. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks.
  2. Mix until smooth and creamy, then spoon or pipe the mixture back into the egg white halves.
Finishing Touches
  1. Garnish with paprika and serve immediately or chill for later.

Notes

For easier peeling, use eggs that are a few days old. Adjust seasoning to taste. For a smoother filling, use a food processor to blend the yolk mixture.
