  • 2 cups Cooked rice
  • 2 Eggs
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tbsp Vegetable oil
  • 0.5 cup Frozen peas and carrots
  • 2 Green onions, chopped for garnish

Method
 

Preparation
  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the frozen peas and carrots and stir-fry for 2-3 minutes until slightly tender.
Cooking the Rice
  1. Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 3-5 minutes, ensuring the rice is heated through and slightly crispy.
Adding Eggs and Seasoning
  1. Push the rice and vegetables to one side of the skillet. Crack the eggs into the empty space and scramble them until cooked. Mix the scrambled eggs with the rice and vegetables, then stir in the soy sauce and sesame oil.
Serving
  1. Garnish with chopped green onions and serve immediately.

Notes

For best results, use day-old cooked rice as it is drier and less likely to clump. You can add other vegetables like corn or bell peppers for variety.
