  • 1 ½ cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 2 teaspoons Ground cinnamon
  • ½ teaspoon Ground nutmeg
  • ½ teaspoon Ground ginger
  • ½ teaspoon Salt
Wet Ingredients
  • 1 cup Pumpkin puree
  • 2 Large eggs
  • ½ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together all the dry ingredients until thoroughly combined.
  3. In a separate medium bowl, combine the pumpkin puree, eggs, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until just combined, taking care not to overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling
  1. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, you can add chocolate chips or chopped nuts to the batter before baking.
