Preparation
- Preheat your oven to 375°F (190°C) and grease a 15x10-inch jelly roll pan. Line the pan with parchment paper, then grease and flour the parchment paper.
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, cloves, and salt. In a separate bowl, beat the eggs and canned pumpkin together.
- Combine the wet and dry ingredients, mixing until just combined. Spread the batter evenly into the prepared jelly roll pan.
- Bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean. While the cake is baking, lay a clean kitchen towel flat and dust it generously with confectioners' sugar.
- Immediately after removing the cake from the oven, invert it onto the prepared towel. Carefully peel off the parchment paper, then starting from a short end, roll the warm cake and towel together.
- Allow the rolled cake to cool completely on a wire rack, still wrapped in the towel. While cooling, beat the softened cream cheese, confectioners' sugar, butter, and vanilla extract together until smooth to create the filling.
Notes
For best results, ensure all cream cheese filling ingredients are at room temperature to prevent lumps. You can also add a pinch of nutmeg to the cake batter for extra spice.
