Preparation
- Preheat oven to 375°F (190°C). Then, pound chicken breasts to an even 1/2-inch thickness.
Breading the Chicken
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Panko, Parmesan, Italian seasoning, garlic powder, salt, and pepper. Dredge each chicken breast in flour, then egg, then the Panko mixture, pressing to coat well.
Frying the Chicken
- Heat vegetable oil in a large oven-safe skillet over medium-high heat. Fry chicken for 3-4 minutes per side, until golden brown.
Baking and Finishing
- Pour marinara sauce over the chicken, then sprinkle with mozzarella cheese. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and chicken is cooked through. Garnish with fresh basil, if desired, before serving.
