  • Large pot
  • Large bowl
  • Potato masher
  • Medium bowl

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Boil the diced sweet potatoes in a large pot of lightly salted water until they are tender, which usually takes about 15-20 minutes.
Mixing
  1. Drain the sweet potatoes, then mash them in a large bowl, incorporating brown sugar, melted butter, milk, beaten eggs, vanilla extract, and salt until smooth.
  2. Evenly spread the sweet potato mixture into the prepared baking dish.
Topping and Baking
  1. Combine pecans, brown sugar, flour, and cold butter in a medium bowl, then sprinkle this mixture over the sweet potato base.
  2. Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.

Notes

For an extra touch of flavor, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture. To make this dish ahead of time, prepare the casserole up to the baking step, cover, and refrigerate. Bake just before serving, increasing the cook time slightly if baking from cold.
