Preparation
  1. In a medium bowl, whisk together the soy sauce, mirin, sake (or rice vinegar), brown sugar, minced garlic, grated ginger, and sesame oil to create the teriyaki marinade.
  2. Add the chicken wings to the marinade, ensuring they are fully coated, then cover the bowl and refrigerate for at least 30 minutes, or preferably for a few hours to maximize flavor.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Cooking
  1. Arrange the marinated chicken wings in a single layer on the prepared baking sheet, discarding any remaining marinade.
  2. Bake for 20-25 minutes, then flip the wings and continue baking for an additional 10-15 minutes, or until they are cooked through and have a nice golden-brown, caramelized crust.
Serving
  1. Optionally, if you prefer a thicker sauce, you can simmer the reserved marinade in a small saucepan over medium heat, whisking in 1 teaspoon of cornstarch mixed with a tablespoon of water, until the sauce thickens.
  2. Serve the teriyaki chicken wings immediately, garnished with sesame seeds and chopped green onions if desired.

Notes

For extra flavor, you can grill the chicken wings instead of baking them. Adjust cooking time accordingly. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
