  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves, minced garlic
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons, drained capers
  • 2 tablespoons, chopped fresh parsley
  • salt to taste
  • black pepper to taste

Method
 

Instructions
  1. Season chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Add chicken and cook for 2-3 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for 30 seconds until fragrant. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  4. Stir in capers and bring the sauce to a simmer. Return chicken to the skillet and spoon the sauce over it.
  5. Garnish with fresh parsley and serve immediately.
