  • 1 (12-14 lb) Whole Turkey thawed

  • 2 sprigs Fresh Rosemary chopped
  • 2 sprigs Fresh Thyme chopped
  • 4 cloves Garlic minced

  • 1 tsp Black Pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Remove the giblets and neck from the turkey, then pat it dry with paper towels.
Flavoring
  1. In a small bowl, mix softened butter with chopped rosemary, thyme, minced garlic, salt, and black pepper. Rub this mixture evenly all over the turkey, including under the skin.
Roasting
  1. Place the turkey on a roasting rack in a large roasting pan. Roast for 30 minutes, then reduce the oven temperature to 350°F (175°C) and continue roasting for 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  2. Baste the turkey every 30 minutes with the pan juices to keep it moist.
Resting
  1. Once cooked, remove the turkey from the oven, tent it loosely with foil, and let it rest for 15-20 minutes before carving. This allows the juices to redistribute, ensuring a tender and flavorful turkey.

Notes

For extra flavor, you can stuff the turkey cavity with aromatics like onion halves, lemon, and additional herbs.
