  • 1 loaf Ciabatta bread
  • 4 medium Tomatoes, ripe diced
  • 2 cloves Garlic cloves, minced
  • 1/4 cup Fresh basil, chopped
  • 1 tbsp Balsamic vinegar
  • 2 tbsp Olive oil plus more for drizzling
  • Salt and black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and slice the ciabatta bread into 1/2-inch thick slices.
  2. Arrange the bread slices on a baking sheet and lightly brush both sides with olive oil, then bake for 5-7 minutes until golden and crisp.
  3. While the bread bakes, combine the diced tomatoes, minced garlic, chopped fresh basil, balsamic vinegar, and 2 tablespoons of olive oil in a medium bowl, mixing well.
  4. Season the tomato mixture with salt and black pepper to taste.
  5. Once the bread is toasted, remove it from the oven and spoon the tomato mixture generously over each slice; serve immediately.

Notes

For an extra touch, rub a raw garlic clove over the toasted bread slices before adding the tomato topping. Adjust the amount of garlic and balsamic vinegar to your preference.
