Cooking Steps
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
- Push the garlic and ginger to one side, pour in the beaten eggs, and scramble until cooked through.
- Add the riced cauliflower and mixed vegetables to the skillet, and stir-fry for 5-7 minutes until the cauliflower is tender-crisp.
- Stir in the soy sauce and sesame oil, cook for another 1-2 minutes, then garnish with chopped green onions and serve hot.
Notes
For extra flavor, you can add cooked chicken, shrimp, or tofu. Adjust soy sauce to taste; you can also add a pinch of red pepper flakes for some heat.
