Ingredients
  

Chicken
  • 1 lb chicken breast cut into strips
Vegetables
  • 2 medium bell peppers sliced
  • 1 medium onion sliced
Seasoning
  • 2 tbsp fajita seasoning
Optional Toppings
  • 4 cups cooked rice
  • 1 cup salsa
  • 0.5 cup sour cream
  • 1 medium avocado sliced

Method
 

Preparation
  1. Slice the chicken breast into thin strips and the bell peppers and onion into similar-sized pieces.
Cooking
  1. Heat a large skillet over medium-high heat and add a tablespoon of oil.
  2. Add the chicken to the skillet and cook until browned, about 5-7 minutes. Sprinkle with half of the fajita seasoning.
  3. Add the sliced bell peppers and onion to the skillet with the chicken. Cook for another 8-10 minutes, or until the vegetables are tender-crisp.
  4. Stir in the remaining fajita seasoning and cook for an additional minute.
Assembly
  1. Divide the cooked rice among four bowls.
  2. Top the rice with the chicken and vegetable mixture.
  3. Garnish with your preferred toppings such as salsa, sour cream, and sliced avocado.

Notes

For extra flavor, marinate the chicken in fajita seasoning for at least 30 minutes before cooking. You can also customize your bowl with other toppings like corn, black beans, or cheese.
